guac you mean?

Happy Monday! So as I have already explained, I am a complete foodie. I think about food very often, sometimes more often than the people I love. Yikes. With that said, I never forget an amazing dish, and sometimes I even try to recreate these dishes at home! Last year, I went to this BBQ/party in the Williamsburg area where they were selling 2/$5 burgers. They had an "alternative" burger, which consisted of grilled pineapple, grilled red onion and guacamole on a bun. That's it---DELISH, and cruelty-free! Typically, I do not like mixing sweet and savory. I tolerate sweet potatoes and fried sweet plantain as my occasional exception in an overall savory meal setting, but that's usually it. But....I've found another exception, y'all! Both the temperature and sweetness of the pineapple were a perfect pairing with the guac, and the red onion kicked it off nicely. Also, I genuinely dislike raw red onions. They make your breath stink for a week, but cooked? Simply divine without the abrasiveness of the raw version, and they balanced out the sweetness and creaminess of the other ingredients very nicely. Whoever created this recipe has the most divine sense of creativity. We must be kindred spirits. In any event, I took the liberty of remixing the recipe somewhat at home, and I also added a bean salad on the side. The guac in the original story was really just mashed avocado, and it needed some fluffing, hence the call for a "remix". Enjoy!
1. I made more than enough guac to make more sandwiches for tomorrow too, but here were the ratios. I smashed [2] organic hass avocados with a tablespoon of salsa, half of a jalapeño [de-seeded and diced], a small amount of chopped leeks, salt & cracked pepper. I used the Trader Joe's brand of chipotle salsa. It has a very distinct taste and I can't get enough of it! If you don't have this specific salsa on hand, I would suggest to check the international aisle of your local supermarket and get a can of the chilies in Adobo sauce. Chop [1] pepper and add to the mixture. Feel free to sub in any brand of salsa, but these chillies are amazing and will change your food once you start using them regularly. You can also buy the chipotle Tabasco to add to regular salsa for a comparable taste. OF course, feel free to sub in onions and garlic to replace the leeks, but the leeks cover both flavors and is the most efficient in my opinion. Also: no tears! Be sure to add a nice squirt of fresh lime juice to keep the avocado that bright green color for the following day. I forgot to do that in this recipe, and it was a murky greenish-brown color the next day. Actually, funny story--I have an avocado facial mask in the fridge as well, and when I went to remake my sandwich the next day, I opened the guac container and thought it was my facial mask [until I smelled the salsa and leeks lol]. Nevertheless, combine your ingredients and set aside.
2. For the bean salad, I used (1) can of organic black beans (rinsed and drained), (1) organic vine ripened tomato [diced] , [1/2] organic cucumber [diced], some chopped leeks, a spoonful of the chipotle salsa, and some salt and cracked pepper for taste. Combine and set aside.
3. I turned on a pan on medium/high heat, and grilled some fresh pineapple slices and sliced red onion until browned on all sides. I am trying to cut down on my oil intake so I did not use any oil. Feel free to use oil if you choose to, but you don't need it so why use it unnecessarily?
4. Not sure of the measurements, but I tore off a piece of the bread, cut it in half, and placed a pineapple slice, some red onion and some guac on each piece of bread. The bean salad was my side dish VOILA!
I love this dish for BBQ season. It's a delicious way to creatively circumvent eating meat in group settings. I guarantee your friends and family will be intrigued and ask for a bite. Fortunately, by the time I finished preparing and serving my dish, my parents had just eaten so they didn't want a bite. I didn't have to share with anyone---#yasssssss! You may not be so lucky my friends! Not to worry, though. Just be like me and say "No"! [j/k---sort of :)] Let me know how this recipe turns out for you. I would love to hear your alternatives.
